From the pantry (Zucchini Slice)

Zucchini Slice

Most people have a Zucchini slice recipe, i have used the same one for years until last year a good friend of mine gave me hers. I have slightly modified it a little and it has become a good stand-by meal that can be handy for lunches the following day...

375g Zucchini
1 Large Onion
3 Rashers of Bacon (I saute First)
1 Cup of Grated Cheddar Cheese
1 Cup of Self Raising flour
1/2 cup of oil (I don't add the oil)
5 Eggs
Salt and pepper


~ Great unpeeled Zucchini coarsely, Finely chop onion and bacon.
~ Combine Zucchini, Onion, Bacon, Cheese, Sifted Flour, Oil and Lightly beaten eggs season with salt and pepper to taste.
~ Pour into well greased Lamington Tin 16cm x 26cm
~ Bake in a Moderate oven (180˚ for 30 - 40 Min's or until Browned
Serves 4 - 6
